Fiesta Salad with Avocado Dressing
This salad is as fun to eat as it sounds! Dressings can be tricky when you’re trying to eat healthy, but this creamy avocado dressing is made with one of the most nutritious foods known to man – avocado.
Avocados are a good source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C. Although they’re technically fruits, avocados have a high fat content of between 71 to 88% of their total calories – about 20 times the average for other fruits. It’s the best healthy fat you can work into your diet, without a doubt.
This recipe calls for grass-fed ground beef, but I’m aware that not many people are fans of red meat. I have found that for meat-eating individuals, having a little red meat from time to time is great so long as we know where the meat is coming from and how it was raised. From an energetic standpoint, when we eat the meat of an animal we are taking on the energetic state of the animal, so we need to understand the importance of the origins of meat.
If you are not a meat-eater, you can add in a veggie source of protein, such as beans or nuts (or, really, anything that sounds great to you). We want to make sure that all ingredients are organic and GMO-free. It will add cumulative benefits to your health when you choose organic and GMO-free foods at every opportunity. Keeping the chemicals out of our food sources is imperative if we want our bodies to function optimally.
I love to add garlic and cilantro to dishes as often as possible. Garlic is an excellent source of manganese and vitamin B6, a very good source of vitamin C and copper, and a great source of selenium, phosphorus, vitamin B1 and calcium. Cilantro offers a powerhouse of nutrition, providing us with essential nutrients like vitamins A and K. This combination may benefit your liver health, too.
Dressing up your meals with seasoning adds flavor and variety while contributing to the vitamin content of your meal (and tastes great, to boot)!
- 2-3 cups shredded romaine lettuce
- 1/4 cup red onion, diced
- 4 tbsp sliced black olives
- 3 green onions, chopped
- 8 oz of grass-fed beef or 1/2 cup of black beans, rinsed
- 1 Roma tomato, chopped
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- 1/8 tsp dried oregano
- 1/8 tsp paprika
- Salt and pepper, to taste
- 1/2 avocado, pit removed
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1 tsp fresh cilantro, chopped
- 1 tbsp water
- Pinch of salt
- To make the dressing, blend the ingredients with an immersion blender or in a regular blender and process until smooth.
- Add more water if necessary to reach desired consistency, and taste for seasoning.
- Set aside.
- Assemble salad by combining all of the salad ingredients in a large bowl.
- Toss well to combine.
- Top with dressing to serve.
