Creamy Avocado Soup

Most soups are filled with hidden sodium, unhealthy fats, and more calories than you would think. One of the things that clients often divulge to me is that they need to have simple recipe options that are easy to make. Not recipes that take forever and a day to prepare, or that require ingredients that are hard to find. The best part about Creamy Avocado Soup is that it is so simple to make.

Can we get a high five for the healthy fats and a whole boatload of nutrients in this powerfully healing soup? Avocado is a good source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C. Although they are fruits, avocados have a high fat content, composing between 71 to 88% of their total calories—about 20 times the average for other fruits. When you throw in some fresh cucumber, you add in an excellent source of vitamin K and molybdenum. They are also a very good source of pantothenic acid, copper, potassium, manganese, vitamin C, phosphorus, magnesium, biotin and vitamin B1.

Avocadoes contain the important hair and nail health-promoting mineral silica, to boot. Love that our hair and nails are getting stronger while our body is getting healthier with all of this wholesome goodness!

Creamy Avocado Soup

  • 1/2 cup water
  • 1 medium acocado
  • 1 cucumber (with or without skin)
  • 1 teaspoon cumin
  • 1 clove garlic
  • 1/2 squeezed lemon
  • Dash of Himalayan salt


  1. Cut cucumber into small pieces.
  2. Place all ingredients in blender or food processor .
  3. Blend until creamy.
  4. Possible garnishes include diced tomatoes, red onions, cilantro.
